Flank

This product includes the flank and bawet pieces obtained from the hindquarter. The cut starts at the level of the superficial inguinal lymph node, splits the M. rectus abdominus, and continues along the hip contour to the thirteenth rib, following the rib contour to the ventral surface. The fibrous part of the linea alba on the ventral side is removed.

– Whether the gland and fat layer under the M. cutaneus trunci are retained or removed,
