Shoulder Triceps and Infraspinatus
This product includes the triceps and infraspinatus muscles of the shoulder, obtained from the forequarter. The cut is made along the natural seam between the ribs and the shoulder muscles M. latissimus dorsi, M. trapezius (superficial muscles), and M. serratus ventralis (from the rib surface of the shoulder blade). The piece is located caudal to the humerus and below the spine of the scapula, containing a significant portion of the triceps muscle.
Note:
– Tail length from the tip of the caudal cartilage,
– Whether the M. subscapularis is retained or removed,
– Whether the tendons at the end of the shoulder joint are retained or removed,
should be specified.
All primal cuts are included.
