Ossenhaas met ketting

This product is the tenderloin with chain, obtained from the hindquarter and removed in one piece from the ventral surface of the lumbar vertebrae and the lateral surface of the hip. The M. psoas minor muscle is left in place.

Note:
– Whether the fat cover is retained or removed,
– Whether the external thick connective tissue (fascia) is removed or retained,
– Whether the M. iliacus (adjacent to M. psoas minor) is retained or removed,
should be specified.
