This product is the bone-in round obtained from the hindquarter. The cut starts at the iliac lymph node and continues to the ischial lymph node, following the line close to the pelvic bone.

Note:
– Whether the superficial inguinal lymph node is retained or removed,
– Whether parts of the pelvic bone and superficial fibrous tissue are retained or removed,
– Whether the sacral tail is retained or removed,
should be specified.
