This product is the rump obtained from the hindquarter. The cut starts at the caudal end of the M. tensor fasciae latae muscle and follows the natural seam towards the base of the quadriceps muscles. A straight cut is made from the acetabulum towards the iliac lymph node along the dorsal side of the pelvis. The tenderloin is separated from the lumbosacral area in a straight line to the iliac tuber and the ventral part of the łata.

– The external thick connective tissue (fascia) is removed,
– The length of the retained M. tensor fasciae latae (tail) should be specified.
