This product is the bone-in sternum obtained from the forequarter. The cut starts at the tangent of the first rib and the first rib segment, continues to the bend of the diaphragm at the level of the eleventh rib, and proceeds to the thirteenth rib.

Note:
– Number of ribs (from 10 to 13 ribs),
– Whether the diaphragm is retained or removed,
– Parallel cutting line and point of separation,
should be specified.
